Strawberry Avocado Salsa!

There are so many reasons and excuses for gatherings in the summer! Sometimes I wish we had the same amount of time for the rest of the year, but nonetheless it is great to capture that time with friends and family! One of my favorite quick and go-to appetizers is Strawberry Avocado Salsa! It takes five minutes, and it is a HUGE crowd pleaser!! Plus, it just looks pretty!

Start with amazing strawberries by washing them and chopping them up. I like mine a little chunky, but you could easily chop finer if needed!

Next, comes those avocados!! Yum! I like to grab the ones that are not totally soft yet because the slight firmness holds up better in this dip! BUT, the avocados from Mexico are totally my preference. They are a little creamier and less sweet than the California varieties!

Then, chop up some cilantro! I have tried and tried growing my own. Feel free to leave me a comment if you have any special tips and tricks on how! And I love to grab the large bunches at the grocery store, but they wilt in like two days which makes me super sad! I’ve started grabbing this little small pack of cilantro that is slightly more expensive, but it keeps longer. Must be the container. 🙂

Chop up some jalapenos. I usually chop these pretty finely so that you get a little pop! in each bite. I also only use about 1/2 of a seeded jalapeno. Up the heat by leaving in the seeds or adding some extra pepper!

Salt and pepper to taste and add a couple of squirts from a lime!

Stir and serve with corn chips!!

3 avocados
10 strawberries (small container)
1 jalapeño
Cilantro
Lime juice (1/4 lime)
Salt and pepper to taste

Chop first four ingredients as fine or chunky as you like. Add lime juice, salt, and pepper, and mix together! Serve with tortilla chips!
